Hi everyone! How was your weekend? Ours has been somewhat busy but mostly a fun weekend!
Saturday I worked for a bit in the morning while L and my husband stayed home and took it easy. We then got ready and headed out the door to pick up the babysitter so we could celebrate my mother in laws’ birthday!
We went to one of our favorite restaurants, Margaritas, for a meal full of chips & salsa, delicious margaritas, and Mexican food! Yum!

Sunday morning L let us sleep in a bit and we all started moving about 7 am, a huge improvement from our normal 5 am wake up time! I did a quick workout at home surrounded by toys and a needy boy.
Does anyone else struggle getting their kids used to daycare at the gym? We’ve tried countless times to bring him to the YMCA and after about ten minutes the lovely ladies always come get me because he is so upset. I have tried staying with him to play then leaving once he is comfortable, dropping him and walking away immediately, and having my husband drop him off. Every time he instantly screams and doesn’t stop until we are back. Any tips? Typically, I can get a good workout done at home but I miss taking classes and having a little time to myself.
Anyway, I got myself cleaned up a bit (yay for dry shampoo!) and headed out to meet my girlfriend for a delicious brunch. We hadn’t seen each other in months and had lots of catching up to do!! We ate delicious waffles and omelets and chatted the whole time. Love her!
After that I made a quick trip to Whole Foods in Westford which is one of my favorites ever! Its on the newer side, opening last year, and is never overly busy. If you’ve ever been to a Whole Foods I am sure you know how crazy they can be with full parking lots and too many people in the aisles. This store also has a great play area for kids so whenever I take L we do half our shop, grab something to eat and stop to play. We then finish up with frozen foods and head home.
Instant Pot Salsa Chicken: This was a big hit last week! We had it over cauliflower and brown rice and then used it as taco filling!
Spaghetti and Meatballs with some veggies hidden in. I tend to try and sneak veggies in wherever I can for L.
Banana Zucchini Pancakes: These were made almost every day last week and L loved them! Ill be sharing the recipe tomorrow! They are quick, easy, and keep well in the fridge. He and I usually will split one with some yogurt for a healthy breakfast.
The rest of Sunday was spent playing with L and watching some football with friends.
