Hi there! I hope your Friday is off to a lovely start and you’ve got some great weekend plans! Maybe a delicious dinner out or drinks with girlfriends?
We have a jam packed weekend full of fun stuff! We’re heading up to my dads house tomorrow morning to spend the day and have a little sleepover tomorrow night. We don’t get to see Ls’ Grampy and YaiYai enough so it should be lots of fun! Maybe my husband and I can even sneak out for a drink alone! Sunday is our typical busy day to get ready for the week with a trip to Whole Foods, meal planning, a quick meeting, and if its nice enough hopefully some time outside!
In typical Friday fashion, I am sharing our Friday favorites from the week below. A few things we’ve been loving and a few I hope to make!
I kind of forgot all about cauliflower rice. It was so popular for a while there and the last few weeks I’ve been making a big batch for dinners and easy lunches. I mix some in with a little brown rice for the baby and my husband to sneak some veggies in and they eat it right up! For this batch I just put a head of cauliflower in the food processor, heated some oil in a pan, sauteed onion and garlic for a few minutes, then added in the riced cauliflower, salt, pepper, and a little salsa! I then topped it with a fried egg, broccoli, a bit more salsa, avocado and hot sauce for an amazing lunch!
Lately, I have been trying to find fun ways to get L out of the house since the park is mostly off limits. He seems to love a change of scenery throughout the day, as do I! I saw the local library was having a music time yesterday and thought that should be fun! Typically, the library sounds a bit too quiet for our wild toddler and I always picture him running around screaming while others are trying to read, study, get work done. Music time though, perfect! We got there a bit early and saw the man setting up with his guitar and all sorts of things for the kids to play with, but L had other plans. Instead of sitting to watch and listen we ran up and down all the aisles, stopped to play with the stuffed animals, and climbed in and out of the cardboard box house playing peek a boo. We still had a ball but I am thankful there was loud music going on to mask Ls’ voice!
The weather here in Boston is totally bizarre. The first half of the week we had rain and ice storms and then yesterday it was 50 degrees and sunny. We took full advantage of the warmer temps and melting snow to get outside and run around! L loves exploring and he runs around everywhere screeching as loud as he can in excitement! His poor little hands were ice by the time we came in! He refuses to wear gloves and some days its not worth the battle.
