Good morning, I hope you all had a great weekend! Our weekend was spent with family and good food and lots of playing with this silly kid!
He has become obsessed with toothbrushes. Not for brushing, that brings on an epic meltdown. For chewing on near his molars that are coming in! We’ve tried instead using the banana brush for him to gnaw on as it’s safer but he screams and yells until he gets that damn toothbrush 😤.
Anyway, Friday night we had a delicious dinner with my mother in law. She and I made spaghetti and meatballs! A few weeks ago she sent home a container of her homemade spaghetti sauce that I threw in the freezer, knowing I’d put it to good use soon. Sunday while at Whole Foods I picked up some ground beef and ground pork with the plans to make one of my favorite meatball recipes during the week.
She was over on Friday anyway helping with L while I had an appointment so I took out the meat and sauce and she and I set out to make the meatballs! They are quick and easy and L loves them also. I like to sneak some veggies into them and find it helps to keep them moist as well. Here’s the recipe for just the meatballs if your interested!
Quick and Easy Veggie Filled Meatballs
- 1 lb 93% Lean Ground Beef
- 3/4 lb Ground Pork
- 1 Summer Squash or Zucchini, shredded
- 4 Eggs
- 1 French Baguette, soaked in milk for a bit, then milk squeezed out (helps keep them moist!)
- Handful of chopped Parsley
- 3-4 cloves Garlic, or to taste
- 1 cup shredded Parmesan cheese
- Salt and Pepper, to taste
Preheat oven to 400 degrees. In a large bowl combine all ingredients. Roll into balls as big or small as you like! We did some cookie dough sized ones for L and some a bit bigger for us. Place on oiled cookie sheet and bake for 15-20 minutes depending on size. (You can also cook in a pan on the stove top!) That’s it!I find these to be really moist, super delicious, and overall pretty good for you. My husband and L both eat them right up.
Saturday morning, L and I headed up to my hometown of Rockport, MA to visit my dad and step mom. Rockport is a cute little seaside town on the North Shore of Massachusetts. Bearskin Neck is a very well known area with lots of little shops and a few restaurants. It’s fun to walk up and down and in the summer you can barely make your way through the crowds of people! This weekend, it was a bit cold and pretty windy so we cut our walk short to head back home and play.
My husband planned to drive down after he got finished up with some work but L and I changed our plans and drove home mid afternoon. We had a great time playing at my dads house. He and L have a great bond and relationship and it is so fun to see them together. I remember my dad being so fun as a kid (and still now!). He is a total goofball and wears L out, chasing after him and flipping him all around.
Saturday night we ordered some food and watched a few more episodes of The Walking Dead. We have one more episode left and then will be caught up! Some episodes are a little to graphic for me to handle but we are loving it!
Sunday morning I headed out to Starbucks to work for a bit and have some breakfast. I love their healthy options and opted for their plain oatmeal. I added a few shakes of cinnamon and a Siggi’s vanilla yogurt, yum!
I also baked a big batch of cookies during nap time! Not so healthy but, moderation!
